The head changes the contact area, which changes how concentrated the force is. A ball spreads it, a bullet or thumb concentrates it, a dampener softens it near bone. Manufacturers publish the names and shapes but no figures, so the choice is by feel and location.

Attachment count does not track price cleanly. The Theragun Relief at $159.99 ships three heads; the Prime G6 at $329.99 ships two. The PRO Plus at $649.99 ships seven and the PRO at $529.99 ships six. Hyperice includes five with both the Hypervolt 3 and the 3 Pro, and two with the Go 3.
Worth knowing
The Theragun Relief shipping more heads than the Theragun Prime, at less than half the price, is the clearest example on this site of a spec that does not follow the price ladder.
No manufacturer publishes a contact area, a force figure, or any measurement that would let you compare one head against another numerically. The names describe shapes. Anything beyond that — which head is best for which condition — is preference presented as guidance, including where you read it here.
